- 250 g spaghetti, linguine, or your favorite pasta
- 3 garlic cloves, finely minced
- 2 tbsp unsalted butter
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp freshly ground black pepper
- 2 tbsp chopped fresh parsley (optional, for garnish)
- 1/4 tsp red pepper flakes (optional, for a spicy kick)
Cook pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of the pasta water, then drain and set aside.
In a large skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes, being careful not to brown it.
Reduce heat to low and pour in the heavy cream. Stir to combine, then whisk in parmesan cheese until melted and smooth. Season with salt, pepper, and red pepper flakes, if desired.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a splash of reserved pasta water.
Garnish with parsley and additional parmesan, then serve immediately.
- Protein Additions: Try grilled chicken, shrimp, or pancetta for a heartier meal.
- Vegetarian Options: Add sautéed mushrooms, spinach, or roasted tomatoes.
- Cheese Substitutions: Pecorino Romano or Asiago can be used instead of parmesan.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat with a splash of cream or milk to restore the sauce’s texture.
