Ingredients
  

  • 2 tablespoons butter
  • 1 small onion finely diced
  • 2 celery stalks diced
  • 1 large carrot diced
  • 3 garlic cloves minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 ½ cups cooked shredded chicken (e.g., rotisserie chicken)
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Pinch of ground nutmeg optional
  • 1 package 16 oz potato gnocchi
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh spinach roughly chopped
  • Salt and pepper to taste

Instructions
 

  • Heat butter in a large pot over medium heat. Add onion, celery, and carrots, and sauté until softened, about 5 minutes. Add garlic and cook for 1 minute, until fragrant.
  • Sprinkle flour over the vegetables and stir well. Cook for 1–2 minutes to form a roux.
  • Gradually pour in chicken broth while stirring continuously to prevent lumps. Add shredded chicken, thyme, and nutmeg. Bring to a gentle simmer.
  • Stir in gnocchi and cook for 3–5 minutes, or until the gnocchi float to the top and are tender.
  • Reduce heat to low and stir in heavy cream and spinach. Cook for 2–3 minutes, or until the spinach is wilted and the soup is heated through.
  • Taste and adjust seasoning with salt and pepper. Serve hot and enjoy!

Notes

  • Make It Vegetarian: Replace chicken with mushrooms or white beans, and use vegetable broth instead of chicken broth.
