For the Crumb Topping
- 1 cup all-purpose flour
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ½ cup cold unsalted butter cubed
Preheat your oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper.
In a medium bowl, mix the flour, brown sugar, and cinnamon for the crumb topping. Add the cubed butter and use your fingers or a fork to mix until coarse crumbs form. Set aside.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg, baking powder, and baking soda.
In a separate bowl, whisk together the eggs, melted butter (or oil), milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced apples.
Pour the batter into the prepared pan and spread it evenly. Sprinkle the crumb topping evenly over the batter.
Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm or at room temperature.
