For the Crust
- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling
- 3 8 oz packages cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
For the Apple Crisp Topping
- 2 cups diced apples Granny Smith or Honeycrisp
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- ½ cup rolled oats
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 4 tablespoons unsalted butter melted
Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla extract. Pour over the cooled crust.
