For the Cake
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon baking soda
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 3 cups diced apples about 3 medium apples
For the Glaze
- ½ cup unsalted butter
- 1 cup brown sugar packed
- ¼ cup milk
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or bundt pan.
In a large bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, and baking soda.
In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced apples.
Pour the batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, make the glaze by melting the butter in a small saucepan over medium heat. Add the brown sugar and milk, stirring until smooth and slightly thickened, about 3–5 minutes.
When the cake is done, poke holes in the top with a skewer or fork. Pour the glaze evenly over the warm cake.
Let the cake cool for 20 minutes before slicing. Serve warm or at room temperature.
