Ingredients
  

For the Cake

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 cups diced apples about 3 medium apples

For the Glaze

  • ½ cup unsalted butter
  • 1 cup brown sugar packed
  • ¼ cup milk

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or bundt pan.
  • In a large bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, and baking soda.
  • In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced apples.
  • Pour the batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, make the glaze by melting the butter in a small saucepan over medium heat. Add the brown sugar and milk, stirring until smooth and slightly thickened, about 3–5 minutes.
  • When the cake is done, poke holes in the top with a skewer or fork. Pour the glaze evenly over the warm cake.
  • Let the cake cool for 20 minutes before slicing. Serve warm or at room temperature.

Notes

  • Storage: Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
  • Freezing: Wrap the cooled cake tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw at room temperature before serving.
