Ingredients
  

For the Fritter Batter

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup milk
  • 2 large eggs
  • 2 cups diced apples about 2 medium apples

For Frying

  • Vegetable oil or canola oil for frying

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Peel, core, and dice the apples. Toss with a pinch of cinnamon and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and nutmeg. In a separate bowl, whisk together the milk and eggs. Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in the diced apples.
  • Heat 2 inches of oil in a deep skillet or heavy-bottomed pot to 350°F (175°C).
  • Drop spoonfuls of batter into the hot oil, frying 2–3 minutes per side until golden brown. Remove with a slotted spoon and drain on a paper towel-lined plate.
  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
  • Dip the fritter bites into the glaze or drizzle the glaze over the top. Let set for a few minutes before serving.

Notes

  • Storage: Store leftover fritter bites in an airtight container at room temperature for up to 2 days. Reheat in an oven or air fryer to restore crispiness.
  • Freezing: Freeze unglazed fritter bites for up to 2 months. Reheat and glaze before serving.
  • Alternative Coating: Instead of glaze, toss the fritter bites in cinnamon sugar while still warm.
