Main Ingredients

  • 4 very ripe medium bananas about 1⅔ cups mashed
  • ½ cup unsalted butter melted
  • ¾ cup brown sugar packed
  • 2 large eggs room temperature
  • ¼ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Optional Add-ins

  • 1 cup chopped walnuts or chocolate chips
  • 2 tablespoons turbinado sugar for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper.
  • In a large bowl, mash bananas until very smooth.
  • Mix in melted butter and brown sugar until well combined.
  • Beat in eggs one at a time, then stir in Greek yogurt and vanilla.
  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Fold dry ingredients into wet ingredients until just combined.
  • If using, fold in nuts or chocolate chips.
  • Pour batter into prepared pan. Sprinkle with turbinado sugar if desired.
  • Bake for 60-65 minutes, or until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then remove to wire rack.

  • Storage: Keep wrapped at room temperature for up to 4 days.
  • Freezing: Wrap well and freeze for up to 3 months.
